Coffee Cake

Ingredients
Cake

1/4 cup Crisco oil

1 egg, beaten

1/2 cup milk

1 1/2 cup sifted flour

3/4 cup sugar

2 teaspoons baking powder (make sure this is fresh!)

1/2 teaspoon salt

Topping
1/4 cup (dark) brown sugar

1 tablespoon flour

1 teaspoon cinnimon

1 tablespoon butter, melted

 

I usually double up on the topping, so double these ingredients :-)


 
Preparation
Topping

Melt butter in plastic wrap covered custard cup, ramaken or small dish in the microwave oven.

Combine brown sugar, flour, cinnimon and melted butter together.

Work semi-dry mixture until all dry ingredients are coated with the melted butter and crumb-like, best done with fingers.

Cake

Combine oil, egg, milk, beat slightly.

Sift together dry ingredients into mixing bowl.

Add the milk mixture and mix well.

Pour into greased and floured 9x9 round or 8x8x2 square non-stick pan and level the batter.

Sprinkle topping mixture over batter.

Bake on the center rack in a pre-heated 325 to 350 °F oven for 25 minutes or until done (about 30 to 35 minutes).


 
Serving Suggestions

Let cool, slice and serve with a nice cold glass of milk.
